Whew, this has been quite a week! My work life has been crazy and stressfull and as moving becomes imminent I am finding those old urges to emotionally eat are cropping up. I must say I have made some improvements this time around and at least I am eating good-for-me food, but really I am eating too much of it. Tonight when I got home I felt inspired to make something beautiful and special and packed with vitamins and fiber for good energy! I had some leftover beans and chili…
Aren’t they cute little beans? Just beginning to sprout as we had soaked them a couple days ago and then weren’t sure how to cope with all the beanage. I cooked them the rest of the way and began to mull over what else I could make. I decided on a Chili-Cumin Chip redux.
Chili Cumin Chips (the sequel)
2 Tbsp grapeseed oil
1 tsp cumin
1 tsp chili powder
2 tsp garlic powder
pinch salt
pinch fresh ground pepper
3 tortilla’s
This time I mixed all the ingredients besides the tortillas in a small bowl and brushed both sides of the tortilla’s with the mixture. Then I cut the tortilla’s into triangles and baked in a preheated 400 degree oven for about 5-7 minutes.
I then spied two lovely green zebra tomatoes and immediately thought..fried green tomatoes! Healthy ones of course..
Breadcrumbs with fresh basil and garlic
I made the breadcrumbs with a rather stale gluten-free english muffin I had lying around. I whirred it in the food processor with some basil and garlic and toasted the crumbs for about 5- 10 minutes in the oven while the chips were baking. Then I put my trusty cast iron pan over medium heat with about 1 tbsp olive oil in it.
While we’re at it lets fry some Basil!
I whisked up an egg and dipped the tomato slices in that and then the breadcrumbs, then into the hot pan! Oh the delicious aroma!
They were totally delectable, crunchy with a little burst of basil and garlic, and then that smooth sweet tomato center. Absolutely heavenly..
I had three of them with a fresh spinach salad tumbled with red beans, guacamole, and green beans blanched of so quickly then tossed in brown butter and garlic.

Poor Jaime didn’t feel well so she only ate a few green beans…:-(
I finished up the night with some intense weight lifting action and some quick fat blasting cardio (high knees! jumping jacks! squat thrusts! yikes!). Yesterday I had a great 5 mile run and am really improving my pace, I am up to 6.5 miles an hour consistently, which is awesome for me! I wanted to run today but I knew the old knees needed a rest!
